Vegan Mango Coconut Milk Ice Cream and Banana Grape Slushie


It isn't easy to make something with Mango... the fruit is so darned good by itself that you just want to eat it plain! I'd been wanting to make some kind of mango based dessert but kept putting it off. Finally, a few days ago I took the last two Alphonso mangoes in the pantry and made this ice cream. My initial idea was to make some kind of mousse using tofu but then I remembered the coconut milk sitting in the fridge and decided to go the ice cream way. It was pretty simple to make and the texture was fairly ice creamy on the first two days. But by the third day (whatever little was left of it by then) got frozen solid! So the idea is to make this in small quantities and polish it off quickly :)

And while we're talking about fruity deliciousness, here's what I made for breakfast today. A banana grape slushie. I'm enjoying it as I type this and it is sooooooo good! I'm so happy I decided to buy 2 kilos of ripe bananas at metro and freeze them. It's such a great way to save and use over ripe bananas.

  2. Meghann it's nothing major, I just put 2 mangoes, 1 package (200 ml) of coconut milk, sugar (a few spoons) and a tsp of arrowroot powder in the blender and made a smooth mixture. Then I froze it and whipped it alternatively at half to one hour intervals.

    Sal I'm keen on trying a chocolate version next time around :)

  5. coconut milk mango ice cream sounds dreamy! I love coconut milk in ice cream I use to have it a lot in temperate weather.

  6. Unfortunately, we don't get any vegan ice creams here. Sometimes it would be so awesome to just buy a quart at the store instead of having to make it at home.
